Turning cashew waste into plant based snack

The project entails adding value to the cashew apple which is regarded as waste after extraction of the nuts to make healthy plant based snacks. Usually, the cashew nut plant has several benefits and different uses for each of its crop parts. Cashew Farmers mostly concentrate on the kennel that has the real cashew and throw the ripe cashew apple fruit during harvesting. This has been due to lack of means to preserve this or add value to this delicious apples. In Kenya, the cashew apple/fruit goes to waste, and having been working in the cashew value chain, we are convinced that the idea of turning the cashew apple into vegan meat/dried fruit could reduce food waste, while also help cashew farmers improve their livelihoods
