he transformation of rural landscapes, as a consequence of the urban sprawl, is a dynamic seen all over the globe. This process is expanding in Valle de Bravo (located 140 km from Mexico City). Traditional Mexican gastronomy, declared intangible cultural heritage by UNESCO is, intrinsically circular, with deep territorial roots, its ingredients are traditionally produced or foraged locally, transformed locally and it’s inherently “zero waste”. The stories and knowledge to transform rural edible landscapes into immortalizers of life and memory have mostly been shared orally. “Los Pulsos de Agua” (Water Pulses) is a socio-environmental dissemination initiative whose purpose is to sensibilise people moving to Valle de Bravo from the City for its natural beauty, forests and water richness. In most cases these people ignore the particularities of the land and it’s from that ignorance that they make decisions that have negative impacts on the local culture and environment. The reason for the publication and the associated experiences is the changing dynamics of the territory with the natural fluctuation of the climate and how the people of the countryside have shaped their lives to adapt, celebrate and “eat” these changes.
