NoA Biosciences will produce a meat replacing fungal protein food using woody biomass as the feedstock. The biomass will be converted into a fermentable substrate (“upstream”), then the fungi will be grown on the substrate locally at farm level (“downstream”), after which it will be processed in a few minimal processing steps into a tasty, healthy, versatile and affordable protein food. It will be marketed through chefs, restaurants and food operators, catering to local taste, preferences and cuisines . The used substrate will be recycled into secondary products such as insect / worm feed, bio-fertilizer, etc.
The unique value proposition of our product and process is multidimensional:
- we use woody biomass as input for our production; this is abundantly available and does not require any agricultural land to be produced
- we use mushrooms as the basis for our fungal protein food, rather than mycelium, which results in better tasting and healthier products with better texture, than most other alt-protein products
- we plan to scale up by multiplication of smaller size units, meaning the scale up costs will be much less compared to most competitors
